Rústico At Hay Shed Hill

I got the five course degustation (10 small plates) with all the add-ons (!) except bravas, and 6 oysters to start. I opted out of dessert so that I could fit in all of the add-ons as I prefer savoury to sweet. Everything was absolutely exceptional and delicious and the service was very warm and friendly. It's also worth noting that I had a few oysters this weekend in Busselton, and these were by faaar the plumpest and freshest. Thank you for making the last stop on my birthday weekend epic. 💜

My partner and I had the degustation on NYE as a late lunch/early dinner, an we’re glad we did. My partner had the regular menu and I had the vegan menu, modified for GF and nut allergies. Most of the dishes were incredible. There were a few slightly odd flavour or dish combos with mine, but that may have been due to the modifications to cater for me and didn’t really detract from the overall experience. We shared the dual wine pairing and there were some excellent wines included. We think we were in the best seat in the venue for a table on two, out on the covered deck area. The staff were attentive, friendly, knowledgeable and made no show of trying to rush us out for them to finish and go celebrate NYE. The venue was beautiful and we would happily go back again. I’m not sure what it’s like during the quieter months, but I would recommend booking to ensure a table and/or tasting.

Enjoyed the 5 course degustation menu at Rústico for my friends birthday & holiday to Margaret River. Our server/sommelier David was lovely and catered to our dietary needs (gluten free & no pork). Overall our experience was exceptional, we really enjoyed the live music and atmosphere. The food was amazing, as well as the wine pairings. Would highly recommend!

The staff were incredibly kind, and their explanations of the wines were clear and easy to understand. Every dish was delicious — each bite was genuinely impressive ❤️ I highly recommend the set course, and the soft drink pairing was also beautifully done. A memorable dining experience from start to finish.

Absolutely incredible dining experience!! We had the 5 course degustation menu and every dish was so delicious and so different from each other that it made for a really satisfying experience. We also had the dual wine pairing and every glass perfectly matched each dish the waiters recommended. We ate outside on the patio and it was the perfect spot to look out over the winery and surrounding hills. Nice and shaded too which was needed on a sunny day. Very dog friendly as well!

Where to even begin? We had our wedding here on the 14th November 2025, and truly couldn't have had a more perfect day. Nat and the entire team at Rustico are masters at what they do and provide the most supportive, beautiful and organised environment. From the moment we chose this venue, we had so much support and guidance along the way. Everything was beyond perfect from the food, the setting, the drinks, the phenomenal staff & sparkler exit. We are still on such a high, and wish we could do this day over again & again.

Rustico was recommended by our peers and we were excited to try their degustation menu with wine pairing! The quality of the produce top notch, and the wine pairing for each course was just on point, and the wines were so goooood! We added on some of the accompanying sides and sadly by the last course, we were filled to the brim. We'll definitely come back to try their tapas menu, and savour their wines! Thank you to their lovely staff, Coco and Maureen, whose amazing service made the experience so much more enjoyable too!
